In this selection, we will be posting recipes for you to try. Our eating habits and food choices are varied and shifting, so you should expect to see a variety of recipes here. We are aiming, however, most recipes towards vegetarian or vegan tastes and cooking styles. Have fun in the kitchen and at the farmers' market! Experiment and expand on your ideas of food.

This recipe is really great on a cold winter's day. It is hearty and delicious.
5-Yukon Gold Potatoes
1-Leek
1-bunch of Asparagus
1-clove of Garlic (to taste)
32 oz. of Organic Vegetable Broth (low sodium)
Oregano, Herb de Province, salt, and pepper to taste
Directions:
1. Cut potatoes (you can leave the skin on but scrub well) into small chunks. Put them in and bring to a boil inside the veggie broth. Continue to cook at a medium heat.
2. While that is cooking, saute the leeks and garlic in some extra virgin olive oil or vegan butter (try Earth Balance) for about 3 minutes until soft. Set aside.
3. Once the potatoes have softened, take soup off the fire.
4. Pour half of the potatoes soup and half of the sauteed veggies in a blender or food processor; blend until smooth.
5. Break or cut the asparagus into bite size pieces. Bring the remaining soup to heat putting in the asparagus.
6. Let that cook; then combine all the ingredients into the pot. Stir, stir, and stir! Add broth as needed.
7. Continue to cook for another 15 minutes adding in all spices and herbs to taste.
Serve with a nice crusty loaf of vegan bread or cornbread and a small salad to round out the meal.

Cereal Bars
Ingredients
2 cups Raisin Bran cereal or any whole grain cereal
3/4 cup flour
1/2 cup brown sugar
1/2 tsp. cinnamon
1/4 cup butter
1/2 cup applesauce
1/4 almonds
1/4 dried cranberries
1/4 dried cherries
**You can add extra raisins and nuts but you must add more butter or applesauce.
Mix ingredients. Press the cereal mixture into a greased 8 X 8 pan.
Press lightly. Bake for 30 min in a 350-degree oven. Cool and cut into bars.
For an even more healthier variety
try adding your favorite powdered protein mix instead of flour.

Red potatoes and wine
What starts out as a simple potato
dish can be dressed up by adding a touch of red wine. The red wine lends an incredible flavor to an
otherwise basic side dish.
10-12 scrubbed red potatoes
1/2-1 tsp. minced garlic
Approximately 2 cups of red wine
Methods/steps
Halve or quarter scrubbed red
potatoes; brown in small amount of oil on all sides. Add minced garlic toward
end of browning so as not to scorch. Add 2 cups red wine and cover immediately.
Cook over medium heat until potatoes are tender. Watch that wine doesn't all
cook away. Serve with remaining wine sauce.
Additional Tip: Add some red onions.

The breakfast bars filled me up, all I wanted within 4 hrs of eating them was something to drink, I was still full. I had two 2 x 2 squares.
